Foodie Factoid: Walnuts are the oldest ‘tree-food’ consumed by humans. They were called Juglans regia, or ‘Jupiter’s royal acorn’ by the ancient Romans. Quite high praise for a nut!

I can’t believe it’s already NYE. That’s crazy! It doesn’t feel like an entire year has vanished down the drain already. 2013 was a pretty good year for me, but I think that 2014 can be even better. I’m not going to be greedy though and if 2014 ends up being similar then that’s good enough for me :). I figured that I may as well throw up one final, delicious recipe to close out the year and because I’m addicted to baking cookies. What can I say? Happy New Year everyone! I hope you all have a wonderful 2014. I wish you the best and look forward to sharing more amazing recipes and funny stories with you in the upcoming year!

Chewy Oatmeal Walnut Cookies:

Preheat oven to 350°F

2 sticks of salted butter (softened)

2 c brown sugar

1 egg & 1 egg yolk

1 tsp vanilla

2 tsp cinnamon

1 1/3 c flour

3 c Old Fashioned oats

1/2 tsp baking soda

1 c chopped walnuts

Instructions:

1. Preheat oven to 350ºF

2. Cream together butter, sugar, and vanilla

3. Stir in all the extra ingredients.

4. Refrigerate dough for at least 20-30 minutes. The cookies shouldn’t spread too much if you choose to ignore this step.

5. Roll dough into balls and place on cookie sheet, pressing down on them slightly

6. Bake for 12-14 minutes
