Waffledoodles. That’s actually so much fun to say. Try saying it five times fast. I think my tongue just imploded haha. Anyway so me being a huge Pinterest addict (it’s a problem) I’ve seen people making waffle cookies recently, but everyone always makes chocolate chip! I thought that was pretty unfair to other awesome cookie varieties and decided to remedy the situation asap. Thus I bring you the waffledoodle. It’s part snickerdoodle and part waffle. I used my favorite snickerdoodle recipe (I should probably post that at some point) and added a bit of maple syrup–can’t have waffles without syrup–and then mixed up my cookie dough the same I would if I were going to pop them in the oven. However, instead I buttered up my waffle iron and went to work. They actually bake so much faster on a waffle iron! Who would have guessed? I mean for me, the queen of impatient people, it was excellent haha.

So I’m not going to advocate that you eat these for breakfast or anything…because who would eat cookies for breakfast? That would just be silly right ;)? Ahem cough not Rebecca cough. Yea so these are technically cookies, which means they are for dessert. Keep that in mind, but you know hey they look like waffles so no one will judge you if you decide to eat them with syrup for breakfast. Not gonna lie I may have had one early this morning before I headed off to work. No shame.

I have to wake up super early for work *sigh*, it’s actually going to be the worst part of this summer–not work, the waking up early part. Work is actually pretty great, I get a real kick out of reading some of the query letters. Today I read a story proposal about a magical mist that sweeps through town and turns all the dogs into ‘dogpyres’ aka dog vampires. I kid you not. I was laughing hysterically when I saw that one. That aside, I get to feel like a real adult when I’m commuting and working at a real desk instead of on my bed all that fun stuff.   Can I still be an adult if I get a kick of of calling a cookie a waffledoodle ;)?

 Waffledoodles

– 2 sticks of softened butter
– 1 c granulated sugar
-1/4 c maple syrup (not the fake stuff, use real grade maple syrup)
– 2 eggs
– 2 tsp vanilla
– 2 3/4 c flour
– 1 tsp baking soda
– 2 tsp cream of tartar
– 1 Tbsp cinnamon

1. Heat up your waffle iron
2. Cream together butter, sugar, vanilla, and maple syrup.
3. Mix in the eggs.
4. Add in cream of tartar, baking soda, and cinnamon
5. Stir in the flour until combined.
6. Either butter your waffle iron or spray with non-stick cooking spray
7. Drop spoonfuls of dough onto the iron and bake for 4-6 minutes. You’ll have to bear with it for the first batch since all waffle irons are different unfortunately.

    • I’ll try my best! Not sure how much more mature I’m going to get from this point on ;). Isn’t the name so much fun to say? I kinda just stood around in my kitchen saying for a while like a total weirdo haha.

And I remember cooking in a dorm kitchen…ugh, it was very challenging, haha. Especially with our ghetto oven we had from the 60’s. No kidding. Thanks for sharing!

    • Thanks so much for stopping by Kaylin! The oven in my dorm was super ghetto too–it probably hadn’t been replaced since the 60’s haha. I’m just glad to be home for the summer where I have a real kitchen to bake in!
